Our Ethos on Food & Drink  

Iglu has been at the forefront of the Edinburgh restaurant scene by extolling the virtues of ethical sourcing since opening our kitchen in 2005.

We are committed to ethically reared meat, using meat abattoired in the Borders supplied from local farms lowers travel stress levels and reduces food miles.
Our fish policy is to use organically or ethically farmed fish, such as sea trout & salmon, which has a lesser impact on the environment & wild stocks. The wild caught fish are from local waters which at present have healthy stock numbers. We do not use any dredged shell fish, our mussels are rope grown and our crabs are pot caught.

Locality has always been important for us here at Iglu. 
If we can find a product close to home that fits our requirements then why wouldn't we support our neighbours & friends! Cutting down on food miles & transportation is now a major issue & it's great to see so many chefs & restaurants joining the cause.

Seasonality is another key element that we have been working with over the years. With many famous chefs extolling the virtues of using seasonal produce, the importance has risen of a more traditional range of fruit & vegetables throughout the year.
